Will & Connie
Sometimes the most interesting journeys begin without a grand plan. For Connie and Will Mussett, what started as a desire to give their children a little more space and teach them where their food comes from has grown into one of the Southern Highlands' distinctive regenerative farming stories.
Born and raised in the Southern Highlands, the couple have been together since their final year of high school at Oxley College. Before farming, Will worked in the family furniture business in Mittagong, while Connie built a career in finance with Westpac. Neither came from a farming background, but in 2016 they embarked on a new adventure, purchasing almost 40 hectares of land in Colo Vale.

Their original ambition was relatively simple: grow some food, raise a few animals and create a life closer to the land. But when connecting electricity to the property proved prohibitively expensive, they embraced off-grid living. A small flock of chickens soon became the beginning of something much bigger.
Today, Mussett Holdings is a thriving family-run regenerative farm producing pasture-raised eggs, gourmet mushrooms, seasonal vegetables, microgreens and raw honey.
What makes their approach particularly interesting is how everything on the farm works together. Chickens help improve the soil, mushrooms are cultivated using growing materials sourced from the property, and spent mushroom substrate is returned to the garden as compost. It's a thoughtful approach to farming that considers the health of the land, the welfare of the animals and the quality of the food it produces.
For Connie and Will, sharing that knowledge is just as important as growing the produce itself.
Their hands-on farm tours invite visitors behind the scenes of a working regenerative farm. Guests can explore the market garden, discover how gourmet mushrooms grow, taste fresh vegetables and raw honey, and meet some of the farm's four-legged and feathered residents.
For visitors following Tasting Trails through the Southern Highlands, Mussett Holdings offers something a little different: an opportunity to get your hands dirty, meet the people growing your food and discover the remarkable connection between healthy soil, happy animals and good produce.
